Cardamom country around Mangan
Learn how large cardamom, Sikkim's best known spice, is grown under shade trees and dried over wood fires in the slopes around Mangan and Dzongu. Best during the autumn harvest, when kilns are working and the smoke smells of spice.

Large cardamom, also called black cardamom, is the smoky spice that goes into garam masala and many meat dishes across India. It grows in Sikkim as a shrub in the understorey of shaded forest, often under Himalayan alder, and the slopes of Mangan district, including Dzongu across the river, are among the places where it is most widely farmed. The plants flower in spring and the red pods cluster at the base of the stems close to the ground.
The harvest runs roughly from September to November. Families cut the pod clusters, separate them and dry them in a bhatti, a simple kiln where the pods sit on a rack over a wood fire for a day or more. That smoke is where the flavour comes from. The dried pods are packed into sacks and sold to traders who carry them down the highway through Mangan and Singtam.
This is not a formal tour. We arrange it through a host family, usually in Dzongu or a village near Mangan, who are happy to show their fields and kiln when work allows. Prices for cardamom swing sharply from year to year and disease has hit many growers, so ask about that too. Buy a small bag directly from the family if they offer it.

Questions travellers ask
Before you book
When is cardamom harvested in North Sikkim?
Large cardamom in Sikkim is usually harvested from about September to November, depending on altitude and the year. Lower fields are picked first. During these weeks drying kilns work day and night, and the smell of wood smoke and spice carries across the slopes. Outside the season you can still see the plants, but not the drying.
Can I buy cardamom directly from farmers in Mangan?
Sometimes, if the family you visit has dried pods to spare and offers them. Prices follow the market and change a lot between years, so do not haggle hard. You can also buy packed cardamom in Mangan and Gangtok shops. Carry it in a sealed bag, since the smoky smell spreads through luggage.
Is large cardamom the same as green cardamom?
No. Large or black cardamom, Amomum subulatum, is a different plant from the small green cardamom of South India. Its pods are bigger, darker and dried over fire, which gives them a smoky taste suited to rich curries and rice dishes. Sikkim has long been one of the main producing regions.
